Ingredients
- 2 lbs. stewing lamb, cut into bite-size pieces
- 21/2 lbs. green beans, strung and halved
- 12 small tomatoes, peeled and coarsely chopped
- 1/4 cup oil
- 1/4 tsp. saffron or tsp. turmeric
- 2 tblsp. paprika
- 2 tsp. salt
- 3 cloves garlic, chopped
- 2 tblsp. lemon juice
Directions
Pre-heat oven to 300 degrees. Combine all ingredients except lemon juice in a heavy baking dish. Cover foil or tight-fitting lid and bake for an hour. Add lemon juice, reduce heat to 200 degrees, and continue to cook uncovered another hour, or until meat is very tender.
